Description:Many thanks to Vin, our host for this month Monthly Foodie Multipliers #16 with theme SOUP, I made this soup last weekend when Miguel had a very bad flu hence no time to post the recipe here .. tomorrow I'm leaving for our girls trip to Canada so I force myself to have it done .. just for you, Vin *winks*

By the way, you can add fish sauce if you like, Miguel & I loved it clear and spicy like this. Ingredients:12 medium prawn 1L Hot Water 150 gr button mushroom (fresh or can), sliced 2 tsp coriander, chopped roughly 2 pcs lemongrass stalk (just the white part) 2 tsp lemon juice 2 chili padi, seeded 1/2 tsp sugar salt as your likingDirections:To make the stock : Peel the prawn, save the skin & head separately,leave the prawn tail intact, put aside. Clean the prawn skin & head, rub dry excess water with paper towel quickly. Heat non stick pot, add prawn skin & head, sauteed until it turns pink (2 mins) add hot water and 1 lemongrass stalk, simmer with lid on for 10 minutes. Strain the prawn stock into another pot, the stock is now ready.
To make the Soup :
Put the stock on the stove, add lemongrass, prawn and mushroom, bring it to boil. Turn down the heat, add chilli, lemon juice, salt and sugar. Sprinkle coriander on top just before serving.

Bahan Kulit : 500 gr tepung terigu protein sedang 1 sendok teh baking powder 150 gr gula pasir (saya pake gula kastor) 2 butir telur kocok lepas 1/4 sendok teh vanilli bubuk (saya pake Vanilla Extract) 1/2 sendok teh garam 650 ml air
Bahan taburan per loyang (modifikasi saya) : 1/4 sendok gula pasir sedikit butter untuk olesan 1 sendok makan cokelat meises 1 sendok makan keju cheddar parutDirections:Kulit :
Ayak tepung terigu & baking powder. Masukkan gula pasir, aduk rata. Tambahkan telur, vanilli & garam, aduk rata. Tuang air sedikit - sedikit sambil dikocok dgn mixer kecepatan rendah sampai adonan tercampur rata. Diamkan 1 jam. Timbang adonan 300 gr, tambahkan 1/4 sendok teh baking powder, aduk rata. Tuang di cetakan martabak manis yang sudah dipanaskan dengan api kecil 15 menit sebelumnya. Biarkan berbusa,tabur gula pasir dan biarkan sampai berlubang,tunggu sampai matang, angkat.

Oles Martabak dengan butter, tabur meises dan keju parut, tumpuk dan potong menjadi dua bagian.

My Mom sent me a big parcel from Bali couple days ago, filled with virgin coconut oil and MANGO from her garden. Some are ripe and some are green (my favorite !), the ripe one gone in an instant (Hubby & Daughter devoured them right away) the green one is my main ingredient for this light salad, THANK YOU, Ibu !!!Ingredients: 1 small green mango, shredded thinly 2 segments of pomelo (or Chinese grapefruit, pummelo, pommelo, Lusho Fruit, shaddock, Balinese Citrus, or suha) Some lettuce 3 tbsp roasted cashew nut, chopped roughly 2 shallots, sliced thinly bird eye chilli (optional) 2 tbsp brown sugar 2 tbsp water pinch of salt Directions: In a medium bowl mix together mango, pomelo and lettuce Dilute Brown sugar in the water, add shallots, chilli and salt mix it evenly Add it to the salad, toss lightly Sprinkle cashew nut on top, serve immediately.

Description:Its Balinese for " Spicy Shredded Beef"
My Mom recipe (Suksma, Ibu), as a kid I was not a big eater unless there's a spicy food on my plate. My favorite was Plecing Kangkung (boiled Water Spinach with spicy sauce) and this particular spicy beef. The recipe is my contribution for MFM # 14 that I'm hosting this month, for those of you who wants to join the fun and meeting new friends please click here Its Time for MFM #14 for more information.
Hurry-up ladies, less than a week to go (^_^)
Ingredients: 250 gr Striploin or Rib Eye (I'm using Rib Eye today) Salt & Pepper 1 tbsp brown sugar 2 tsp Kaffir lime juice Daun salam 1 tbsp coconut virgin oil
Blend the following to form a paste : Red Chilli 3 cloves garlic 1 tomato
Directions: Blanched the beef in boiling water for 2 minutes, drain well and shred it with hands In a bowl marinate the beef with chili paste, cover then put it in the fridge for minimum 1/2 an hour Heat the coconut oil in nonstick pan, add the beef, daun salam, brown sugar & kaffir lime juice, stir evenly. When all the liquid gone add salt & pepper to taste, serve it immediately.
PS. I serve them on a bed of cabbage (or lettuce) as appetizer or with steam rice as main course, deliciously spicy.

Jamannya masih nebeng tinggal di rumah Or-Tu di Bali sesudah Hari Raya besar rumah pasti penuh pisang, Ibuku akan bikin pisang goreng di hari pertama, pisang rebus hari kedua, pisang rai hari ketiga dan yang terakhir bikin pisang sale (di-salai). Kebetulan Kamis kemaren surudan pisang banyak jadi hari ini bikin Pisang Rai, Ariel & Miguel makannya rebutan, setiap mateng langsung abis ..doyan apa rakus yaaa *smile*
Ingredients: 7 - 8 buah pisang raja atau pisang kepok yang tua 125 gr tepung beras 125 ml air 1/2 tsp garam (sesuai selera) 1 tsp gula pasir 150 gr kelapa parut, kukus dengan 1/4 tsp garam 4 lembar daun pandan, buat simpul
Directions: Didihkan 1.5 liter air dengan sedikit garam, masukan daun pandan. Campur tepung beras, gula, air & 1/2 tsp garam dalam mangkuk, aduk dengan garpu sampai adonan menjadi licin. Celup pisang satu persatu ke dalam adonan tepung dan masukkan ke air pandan yg mendidih. Rebus sampai matang dan terapung kemudian angkat, tiriskan. Gulingkan pisang pada kelapa parut, potong sesuai selera. Hidangkan dengan taburan gula pasir jika suka.

This is my first attempt to use my mini bundt tins to bake a cake, they are just the cutest thing. My daughter had a blast, she ate half of the cake so fast without moving from her seat (which is very rare), one happy Mommy here ;o)
Ingredients: 225gr caster sugar 115 gr margarine (room temperature) 175 gr plain flour 2 lightly beaten eggs 175 ml fat - free milk 1 tsp vanilla essence 1 tsp baking powder
Directions: Preheat the oven (I'm using gas mark 3) Grease 6 mini bundt tins. In a bowl, beat the margarine & sugar with an electric whisk until thick and pale. Slowly add the eggs and vanilla, beating well. Mix the flour & baking powder in another bowl, add to the margarine mixture in thirds, alternating with the milk. Spoon the mixture into each bundt tin until three quarters full Bake for 35 minutes Then remove from the oven, cool on a rack. Stored in airtight container for up to 2 days. Who is Renu ? She is my Sri Lankan friend that used to be my neighbor in Bali, this is her second recipe that I'm using for MFM, the first one you can check it out here MFM #9 - Spicy Potato. I love this particular Egg Sandwich 'cause its SPICY. If you want to serve it to the whole family divide the mixture in half, put it in separate bowl and add chilli only in one bowl .. don't forget to cut it differently (that's what I do, triangle is spicy & square is not spicy). Its yummy for coffee morning, quick lunch or teatime.
Ingredients:
 10 slices white sandwich bread 3 Egss, boiled then peeled after cooling it off 2 ripe tomatoes, peeled, seeded, chopped 1 shallot, thinly sliced 3 bird eye chilli (cabe rawit), thinly sliced (I use 7) 2 tbsp mayonaise salt & pepper to taste
Directions: In a bowl, mashed the boiled egg with a fork Add the tomatoes, shallot & chilli, mix it together. Add mayonaise, salt & pepper, mix it well. On one slice of sandwich bread spread the egg mixture evenly then top it up with another one slice of sandwich bread. Cut into squares or triangles. Serve immediately.

Description:Thank you, Sulis.... our beautiful Host for MFM#11 with theme "Beans & Nuts", for those of you who interested to participate please click here MFM #11 : Beans & Nuts, still plenty of time to prepare something using ingredients from the theme until the closing date, January 31st, 2008. Originally I read this recipe in Meals in Minute - Low Fat from The Australian Women's Weekly cookbooks but I did some adjustment after several time making it to suit our taste and preference. Its really easy to make and you can substitute the sweet potato with pumpkin for instance (I did it before, yummy !) but this is our family favorite so far .. I'm using 2 different type of sweet potato to get different color on the stew, if you only can find normal sweet potato it's fine too. We eat it with cous cous & avocado salad for lunch today, delicious ;o) Ingredients:1 tbsp vegetable oil (I use Safflower Oil) 1 medium brown onion (bawang bombay) 2 cloves garlic, crushed 2 tsp ground cumin 2 tsp ground coriander 1 tsp sweet paprika powder 1 tsp chilli powder (optional) 1 large Satsumaimo (red skin sweet potato), peeled & cubes 2 small Sweet Potato (I'm using ubi cilembu), peeled & cubes 1 can Chickpeas/ Garbanzo Beans (300 gr), rinse, drained 1 cup Green Peas 4 medium tomato, peeled, chopped coarsely 1/2 tsp brown sugar Salt & Pepper to taste 3 cups vegetable stock (750 ml) Directions:Heat oil in a pot Cook onion & garlic,stir it until onion softens. Add spices, continue stirring until fragrant. Add cubes sweet potatoes, vegetable stock, chickpeas, green peas, and tomato, bring it to boiling point then lower the heat, covered & simmer about 15 - 20 minutes. Add brown sugar, salt & pepper to taste. Serve with cous cous and low fat yoghurt, if desired.  (^_^)

My husband love this particular dish, in Bali they serve it as appetizer (companied by prawn crackers) but for me its yummy with steam white rice and sliced cucumber :0) Its very easy to make and you can marinate the fish the day before you need it, also you can substitute tongkol with any other white fish available in your area. Ingredients:1 small Tongkol (around 400 gr), cut into 4 pieces Fish paste (to marinate): 2 shallots 2 garlic 1 big red chilli 1 medium tomatoes, seedless 1 tbsp coconut oil 1 tsp salt 1/4 tsp pepper 1/2 tsp sugar Blend all the above until it form a smooth paste, season the fish, refrigerate minimum an hour. *Sambel Matah + Sereh : 2 shallots (sliced thinly) Sliced Bird Eye Chilli (as much as you can stand basically, mine is 5 green & 5 red) 3 Lemongrass, sliced thinly (just the white part) 1/2 Kaffir lime juice (jeruk limo) 1 tbsp coconut oil Salt Mix shallots, chilli & lemongrass with a fork, add lime juice, salt & oil, put aside. Directions:Preheat the nonstick pan with a little bit of oil, add the marinated fish,(add daun salam if you wish) cook it over medium heat and turn it couple of times until its cooked.  Let it cool off before breaking it into small chunks. Place Tongkol in a bowl, add sambal matah + sereh and mix it well. Serve immediately with crackers or steam rice.  (^_^)
