I had never been to a Baking Course ever in my life (apart from my college time where one of my subject was Food Production back in 1996) and I had a BLAST today.


Thank you Mbak Rita, for squeezing me in to join you in Pak Sahak's class today, you are awesome !!!

For all the ladies that were in my class today (16 ladies & 1 gentleman actually), was very nice meeting you all and looking forward to the next class .. learning with you all was a great experience

PS. Incase any of you wondering what we learn today, the results are in the picture, it was Opera Cake, Tiramisu, Black Forest Cake and Japanese style Puff Pastry with Chocolate Filling (Sus Jepang, please correct me if I'm lost in translation *grin*).

PPS. Gotta go pack my bag now, yaaayyy long weekend !!!

I must admit that I have difficulties choosing which recipe to use & how I'm gonna dress - up my cupcakes for this event (me being the perfectionist .. tehee). Then its down to me today that I should use the recipe that I know by heart, hence I'm sharing my ultimate Chocolate Cupcakes recipe here (honestly, I bake this once a week for the family) then I'm using Chocolate whipped cream that both Ariel & Miguel love as the frosting .. huuurrrraaaayyyyy .. now we are ready !!!!

Ingredients:
Chocolate Cup Cakes :

100 gr unsalted butter, soften
75 gr caster sugar
100 gr self raising flour
2 eggs
2 tbsp cocoa powder
1/2 tsp instant coffee

Directions:
Combine all the ingredients in a large bowl and beat with an electric whisk until smooth (about 2 - 3 minutes)
Spoon the batter into the cases.
Bake for 18 - 20 minutes
Remove tins from the ovens and cool for 5 minutes
Then remove the cupcakes and cool on a wire rack.

*Store without icing in air tight container for up to 2 days.

Chocolate Frosting:
1 tbsp cocoa powder
2 tbsp icing sugar
175 ml whipping cream
1 tsp vanilla essence
1/2 tsp orange essence

To make the frosting:
Sieve the cocoa and icing sugar together into a medium bowl.
Add the cream, vanilla and orange essence.
Beat until soft, but the cream should still hold it's shape.
Spoon over the cupcakes, add crystal sugar if you like.

PS. My daughter will lick-up all the sugar first, then the frosting and eat the cake last .. very predictable *winks*

March 8 is International Women's Day, a major day of global celebration for the economic, political and social achievements of women.

Zorra from kochtopf.twoday.net is hosting Yellow cooking event on this special day, the idea is to post it on March 8 and its over midnite now in jkt so here's my post ;o)

This is my first attempt to use my mini bundt tins to bake a cake, they are just the cutest thing. My daughter had a blast, she ate half of the cake so fast without moving from her seat (which is very rare), one happy Mommy here ;o)

Ingredients:
225gr caster sugar
115 gr margarine (room temperature)
175 gr plain flour
2 lightly beaten eggs
175 ml fat - free milk
1 tsp vanilla essence
1 tsp baking powder

Directions:
Preheat the oven (I'm using gas mark 3)
Grease 6 mini bundt tins.
In a bowl, beat the margarine & sugar with an electric whisk until thick and pale.
Slowly add the eggs and vanilla, beating well.
Mix the flour & baking powder in another bowl, add to the margarine mixture in thirds, alternating with the milk.
Spoon the mixture into each bundt tin until three quarters full
Bake for 35 minutes
Then remove from the oven, cool on a rack.
Stored in airtight container for up to 2 days.

After baking cupcakes for Ariel's B'day (a big success.. thank God) nowadays I love playing with the icing decoration, I made it simple and homey but (hopefully) still cute ... "The kind that my mom used to make " my friend Kuniko said.

Since most of you are far away from us I can't send you any of these tiny treasure but here's the recipe for a yummy classic edible buttercream :

1 part of white butter
1 part of unsalted butter
1 part condensed milk (add more if you wish)
colouring (optional)

Beat in medium speed for 3 - 4 minutes, voila ready to go :)

Last night I baked 3 dozens basic cup-cakes and here is the result ...

More on coconut, this recipe is from my auntie Ketut Karmiti with a little bit of modification from me. She will made it couple of hours before the Balinese ceremony started (Otonan, Purnama, etc) hence "dadakan" but its the best Jaja (kue or cake in Balinese) that I'm craving from time to time. When I was away from my Parents home I discovered that WINGKO has similar taste with this particular Jaja Uli and nothing beat the freshly made one (obviously).

Its not sweet cake but "gurih" (help me with translation here, anyone ?) in taste, just right for me ;-)

Anyway, you will need :
2 small Freshly grated peeled Coconut
150 gr Sugar
275 ml Water
1 tsp Vanilla essence
1/2 tsp salt
400 gr Sticky Rice Flour (Tepung Ketan Putih)
200 gr Rice Flour (Tepung Beras)
1 Egg Yolk
2 Tbsp Honey/Maple Syrup

Boil water then add sugar + salt + vanilla essence until dissolved with small fire, cool it off .
Mix Flour with Grated coconut evenly, add the liquid sugar water bit by bit then start kneading the mixture

Once it's not sticky in your hand then its ready

Spread it on a Baking Tray lined with paper, flatten them up with the bottom of your palm evenly
Bake it on high (gas mark 6) for 20 minutes.

Take it out from oven then brush the Egg Yolk + Honey on top of the cake, put it back in the oven
When the top is golden in color take it out, cool it off on a wire rack
