Description:
Many thanks to Vin, our host for this month Monthly Foodie Multipliers #16 with theme SOUP, I made this soup last weekend when Miguel had a very bad flu hence no time to post the recipe here .. tomorrow I'm leaving for our girls trip to Canada so I force myself to have it done .. just for you, Vin *winks*

By the way, you can add fish sauce if you like, Miguel & I loved it clear and spicy like this.

Ingredients:
12 medium prawn
1L Hot Water
150 gr button mushroom (fresh or can), sliced
2 tsp coriander, chopped roughly
2 pcs lemongrass stalk (just the white part)
2 tsp lemon juice
2 chili padi, seeded
1/2 tsp sugar
salt as your liking


Directions:
To make the stock :
Peel the prawn, save the skin & head separately,leave the prawn tail intact, put aside.
Clean the prawn skin & head, rub dry excess water with paper towel quickly.
Heat non stick pot, add prawn skin & head, sauteed until it turns pink (2 mins) add hot water and 1 lemongrass stalk, simmer with lid on for 10 minutes.
Strain the prawn stock into another pot, the stock is now ready.

To make the Soup :

Put the stock on the stove, add lemongrass, prawn and mushroom, bring it to boil.
Turn down the heat, add chilli, lemon juice, salt and sugar.
Sprinkle coriander on top just before serving.

I have confession to make, I bake cupcakes for a living.
It gives me the chance to be home with my daughter and be creative at the same time.
On the day that I produced 360 cupcakes within 24 hours with help from my girls (June 5th, 2008), my darling Hubby said that we have a Home Industry now, I have to agree with him.

Chocolate Ganache frosting on yellow cake, made from 2 type of Lindt Chocolate (70 % Cocoa bar & Milk Chocolate bar) and New Zealand butter.

"Extravagance !!!!" exclaimed my girlfriends.
"Heavenly. " was my immediate reply.

My Mom sent me a big parcel from Bali couple days ago, filled with virgin coconut oil and MANGO from her garden. Some are ripe and some are green (my favorite !), the ripe one gone in an instant (Hubby & Daughter devoured them right away) the green one is my main ingredient for this light salad, THANK YOU, Ibu !!!


Ingredients:

1 small green mango, shredded thinly
2 segments of pomelo (or Chinese grapefruit, pummelo, pommelo, Lusho Fruit, shaddock, Balinese Citrus, or suha)
Some lettuce
3 tbsp roasted cashew nut, chopped roughly
2 shallots, sliced thinly
bird eye chilli (optional)
2 tbsp brown sugar
2 tbsp water
pinch of salt


Directions:

In a medium bowl mix together mango, pomelo and lettuce
Dilute Brown sugar in the water, add shallots, chilli and salt mix it evenly
Add it to the salad, toss lightly
Sprinkle cashew nut on top, serve immediately.

I missed 2 themes already on this photo event (Sorry Pepy) but this evening I'm posting photos of our family favorite Pasta dish, Spaghetti with Tomato & Mushroom Sauce.

It is super easy to make, deliciously nutritious and I cook it 3 times a week for the three of us (cause we LOVED it !)

My daughter and Nina, our neighbor daughter, having tea party earlier this afternoon. They were 6 months different in age (Nina is older) but they share the same interest and very girlie. Dressing - up is one of their favorite things in common (obviously). Picture taken with Canon 300D in our balcony, not the best quality shot but my favorite out of the 3 shots (run out of battery .. arrgghh) the moment I load new batteries they were into something else already 

By the way, the weather is still un-predictable here in Jakarta (it was raining last night) but I'm looking forward to more outdoor playing and girlie tea party

Good morning from beautiful and sunny Jakarta (for a change).

These photos are my entry for Pepy's Weekly Food Photography event, this week theme is Be Creative with your Sandwich. My favorite sandwich since I started being (very) curious in the kitchen is Banana & Cheese Sandwich, there's something about sweet and savoury in it that just simply delicious. My darling hubby get a bite every now and then when he's around, he went to the gym before work this morning so all of these are MINE (^_^)

One of my hobby since I'm a little girl is wearing bangles, never a single day you will see me without it .. up till now. These are small part of my growing collections, love these colorful indian bangles that I picked up in Little India, Singapore several years back .. I'm pretty much owning every color possible, can't help myself to add s'more whenever I spot them

This week theme for Picture Perfect Friday is Illumination. Since we're just back from Singapore last Monday (with lots of memorable moments) I'm using this particular shot for PPF this week, taken with Canon EOS 300D in 2005 of Singapore's famous Esplanade Theater at the bay (yes, it's shaped like the famous durian fruit). We were taking a night stroll in Marina Bay over looking the Theater that night, such a magnificent view with all the lights illuminating on the sky, the water front, just gorgeous .... took heaps of pictures for sure

PS. No night shots taken from recent trip since we have a 2 years old daughter with strict bedtime routine *winks*

Had a FANTASTIC time in Singapore, was great to go to a familiar place and introducing lots of 'new' experience to Ariel. She was an angel during the flights, a great sport during our endless outdoor walking (and shopping) eat very well (tried Indian food too) and social bubbly girl with our friends and their children, she had a BLAST *smile*

Above pictures are some of our 'favorites' during this short weekend trip, from the clear blue sky (picture taken at Changi airport, 15 minutes after we landed) fast Mono Rail Train (Ariel's favourite part obviously), yummy Food (Chicken Rice, roasted & steamed) and the best CALAMANSI juice in can !!!

More pictures to follow later, must run and do my errands now, I'm sorry if I miss all your wonderful posting on MP but I will catch- up for sure, take care everyone (^_^)

I must admit that I have difficulties choosing which recipe to use & how I'm gonna dress - up my cupcakes for this event (me being the perfectionist .. tehee). Then its down to me today that I should use the recipe that I know by heart, hence I'm sharing my ultimate Chocolate Cupcakes recipe here (honestly, I bake this once a week for the family) then I'm using Chocolate whipped cream that both Ariel & Miguel love as the frosting .. huuurrrraaaayyyyy .. now we are ready !!!!

Ingredients:
Chocolate Cup Cakes :

100 gr unsalted butter, soften
75 gr caster sugar
100 gr self raising flour
2 eggs
2 tbsp cocoa powder
1/2 tsp instant coffee

Directions:
Combine all the ingredients in a large bowl and beat with an electric whisk until smooth (about 2 - 3 minutes)
Spoon the batter into the cases.
Bake for 18 - 20 minutes
Remove tins from the ovens and cool for 5 minutes
Then remove the cupcakes and cool on a wire rack.

*Store without icing in air tight container for up to 2 days.

Chocolate Frosting:
1 tbsp cocoa powder
2 tbsp icing sugar
175 ml whipping cream
1 tsp vanilla essence
1/2 tsp orange essence

To make the frosting:
Sieve the cocoa and icing sugar together into a medium bowl.
Add the cream, vanilla and orange essence.
Beat until soft, but the cream should still hold it's shape.
Spoon over the cupcakes, add crystal sugar if you like.

PS. My daughter will lick-up all the sugar first, then the frosting and eat the cake last .. very predictable *winks*
